Feel free to add a small jar of your favorite sugar-free preserves, some raw agave nectar, even Grand Marnier and/or some nuts and cranberries - voila! You have an original Be Free Bakers Power Muffin!
Another option: This mix makes an excellent whole grain pie crust - just add a stick of butter, some apple cider vinegar, a tiny bit of sweetener and a little water or milk, refrigerate and press into your parchment lined baking dish. Bake 15 mins at 350°, then add pie filling and rebake. Yummy!

This lovely sugar-free mix is as whole-grain and healthy as you can get. High-fiber, high-protein, lots of iron, you name it! Teff flour is a magic grain. Kaniwa and Buckwheat round out the lovely whole grains. These pancakes are amazing. If you prefer to eat vegan, they are great without eggs. If you want an egg, feel free to add an egg or two. The change is subtle; the pancakes are a little loftier and lighter with the egg but remain beautifully whole grain and scrumptiously healthy, and of course, still gluten-free. 4 grams each protein and fiber in a single serving of the mix!!!
